Celestial's Whole-Berry Gourmet Cranberry Sauce
48 Ounces Ocean Spray cranberries
* 4 Cups 100% Pomegranate Juice
* 4 Cups Ye Olde Sugar
3 Teaspoons ground cinnamon
¼ Teaspoon nutmeg
¼ Teaspoon ground cloves
Bring pomegranate juice to a boil. Add dry ingredients to the boiling juice, stirring occasionally. When the dry ingredients have blended completely, add the cranberries to the boiling juice. Bring to a boil, stirring occasionally. Once it reaches a boil, reduce to a simmer for approximately 15 minutes or until most of the cranberries have ruptured.
Remove and cool to room temperature in a covered dish to prevent the surface from drying out and forming a skin.
For maximum flavor, serve at room temperature or refrigerate for later use. ENJOY!
Yields 10 cups.
* Ye Olde Sugar is difficult to obtain as it contains the "Spice ov LiFe" so you may substitute with "Sugar in the Raw," brown sugar, or other granulated sugar, etc. If you use honey, "Karo" light syrup, etc., I recommend that you boil it for a longer period (before adding the cranberries) to evaporate some of the water to thicken the final product or, instead, you may use pectin to thicken it. I've never experimented using molasses as I think that may detract from the flavor I am trying to achieve.
Also, I've never tried using cranberry juice in place of pomegranate juice but one of these days I may try using some Mogan David to give it some kick!

I thought a hint of mint might enhance the flavor but I am not happy with the consistency of this batch. It seemed to produce an upper crust (thicker consistency) than the lower portion so I suggest leaving it out.
I am deleting it from the basic ingredients.

Sounds good. If you ever get down to Massachusettes, USA, visit Carver, where they have the Edaville Railroad, which runs a narrow gauge train . You can take a scenic ride through the cranberry bogs, and this time of year they have a really nice Christmas light display.

Thanks for the comment; the sauce has been getting rave reviews from those who taste it and every year I have to keep making larger and larger batches. It is good so I decided to share it with everyone since I'm not going commercial with it.
Hey, those narrow gauge trains are fun; if I ever make it over there I'll be sure and take the tour.
